August 2010 - Apple Marmalade at Tucker’s Emporium in Blairsville, Georgia
Caroline Pirie has been cooking up some delicious apple marmalade, apple butter, applesauce, and apple pie filling. She says, “We had an abundance of apples this year in Union County so I decided to make extra goodies to sell.” Together with friend Tracey Nickolson, there has been lots of picking, peeling, and coring going on. Caroline adds, “We harvested red and green apples of several varieties. Our husbands do the picking and peeling, and then we do the cooking.”
